I menaged to find what's the issue: BEFORE choosing the track you have to select the kart and set opponents to "same class", if you set opponents cars to "identical" or (obviously) "multiclass" kart tracks will disappear. In general driving karts is vastly different from driving cars, aside from the basic mechanics. Project cars 2 karts are trash though. As Neckbeard pointed out, PC2 Karts are trash. But one key thing I had to learn about them was you should almost always be on the gas or the brake.

My only complaint is that I don't like the way the game's soft lock with a wheel works or feels, it tends to forcibly spring the wheel back within the steering range.
