To get the pedals working you have to set the controls for accelerate and brake as analog up and down in the options cause the accelerate and brake really are analog controls. For the shifter, the only way I got it working was to program up and down (on the shifter) as R2 and L2 and set the shift up and down accordingly (in the options).

One reason for that is likely that the headset interface isn't compatible with whatever changes were made in the Xbox One series of consoles. For the Mad Catz MC2 racing wheel there is a downloadable driver for the PC however, they are only compatible with Wins 95/98/Me. Through some more digging I've found a few forums that went into great detail about splicing and rewiring and jerry-rigging the cords from the MC2 to configure to USB.
