It’s called rev matching. You want to tap on the gas, “blip the gas”, just enough that the revs in the engine for the lower gear you want to enter match the revs of the higher gear. Ex shifting from 4th to 3rd. If your revs are lower the rear tires will lock up. If they’re too high the car will lurch forward.
